Roll-Ups
8 slices fresh white sandwich bread
2 oz cream cheese, at room temperature
4 large strawberries, finely diced
2 tbsp unsalted butter (for frying)
Egg Mixture
2 large eggs
1 tbsp milk
½ tsp ground cinnamon
1 tsp vanilla extract
Prep Bread: Trim crusts off bread. Flatten each slice with a rolling pin.
Fill & Roll: Spread a thin layer of cream cheese on each slice. Add a few diced strawberries. Roll tightly and seal edges with a light press.
Mix Egg Wash: In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla.
Dip & Cook: Dip each roll in the egg mixture. Melt butter in a skillet over medium heat. Cook roll-ups seam-side down, turning until all sides are golden brown.
