1½ lbs baby potatoes, halved or quartered
2 tbsp olive oil

1 tsp smoked paprika
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
1 bell pepper, sliced (any color)
1 cup fresh spinach (optional)
