Pumpkin Muffins with Brown Sugar Streusel

Muffins:

4 eggs

2 cups granulated sugar

2 cups pumpkin purée

1½ cups vegetable oil

3 cups all-purpose flour

2 tsp baking soda

1 tsp baking powder

3 tsp pumpkin pie spice

1 tsp vanilla extract

½ tsp salt

Cooking spray

Streusel:

2 cups all-purpose flour

1 cup brown sugar

½ tsp pumpkin pie spice

1 cup butter, melted

Glaze:

2 cups powdered sugar

3 tbsp milk or cream

½ tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Spray or line 2 muffin tins.

Whisk eggs, sugar, pumpkin, oil, and vanilla. In another bowl, mix flour, baking soda, baking powder, salt, and pumpkin spice. Combine wet and dry.

Divide batter into tins.

Mix streusel ingredients until crumbly. Top muffins generously.

Bake 20–23 minutes until set and golden. Cool slightly.

Mix glaze and drizzle over muffins once cooled.
