Mediterranean Ground Beef Stir Fry

This dish brings together warm spices, juicy vegetables, and creamy feta in one comforting bowl. It’s a go-to for busy nights when you want something hearty, healthy, and full of flavor. 1 lb ground beef

1 tbsp olive oil

1 small onion, chopped

1 zucchini, sliced

1½ cups cherry tomatoes, halved

Salt and pepper, to taste

¼ cup crumbled feta cheese

Fresh parsley, chopped (for garnish)

Instructions

Heat olive oil in a large skillet over medium heat.

Add onions and sauté until soft. Add ground beef, season with salt and pepper, and cook until browned.

Stir in zucchini and cherry tomatoes. Cook for 5–7 minutes, until tender.

Remove from heat, top with feta cheese and parsley. Serve warm.
