1 cup pancake mix
½ cup milk
1 egg
1 tbsp melted butter
1 tsp vanilla extract
1–2 tbsp maple syrup (plus more for dipping)
Preheat oven to 375°F (190°C) and grease a mini muffin tin.
In a bowl, whisk together pancake mix, milk, egg, melted butter, vanilla, and maple syrup until smooth.
Fill each muffin cup ¾ full with batter.
