2 large bananas, mashed

2 large eggs

¼ cup maple syrup or honey

1 cup milk (any kind)

1 tsp vanilla extract

Dry:

2 cups old-fashioned rolled oats

½ cup ground oat flour (blend oats if needed)

1 tsp baking powder

1 tsp ground cinnamon

¼ tsp salt

Flavor Variations (Toppings)

1. Blueberry Almond

Top with blueberries and sliced almonds

2. Strawberry Coconut

Add diced strawberries and sprinkle with unsweetened coconut flakes

3. Chocolate Banana

Add banana slices and a few chocolate chips on top

Instructions

Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.

In a large bowl, whisk together mashed bananas, eggs, milk, syrup/honey, and vanilla.

Add oats, oat flour, baking powder, cinnamon, and salt. Stir until well combined.

Divide batter evenly into muffin cups.

Add toppings based on your flavor choice(s).

Bake for 20–25 minutes or until set and lightly golden.

Cool and store in the fridge for up to 5 days.
