Greek-Inspired Chicken Gyro Bowl

This gyro bowl is a Mediterranean flavor bomb—crispy air-fried chicken thighs, fluffy jasmine rice with butter, fresh tomato-cucumber salad, and a big spoon of creamy homemade tzatziki. It’s the kind of meal that feels like a warm hug and tastes like sunshine.

2 air-fried chicken thighs, seasoned (salt, pepper, oregano, garlic powder)

1/2 cup cooked jasmine rice with a pat of grass-fed butter

1/2 cup tomato, cucumber, and red onion salad with crumbled feta

23 tbsp homemade tzatziki (Greek yogurt, cucumber, garlic, dill, lemon juice, olive oil)

Salt, pepper, olive oil, herbs to taste

Instructions

Chicken: Air fry seasoned chicken thighs at 375°F (190°C) for 16–18 minutes, flipping halfway. Rest, then slice.

Rice: Cook jasmine rice and mix in grass-fed butter for richness.

Salad: Toss chopped tomatoes, cucumber, red onion, and crumbled feta with olive oil, lemon juice, salt, and pepper.

Tzatziki: Mix Greek yogurt with grated cucumber, minced garlic, lemon juice, olive oil, and fresh dill. Chill.

Assemble: Layer rice in a bowl, top with sliced chicken, salad, and a generous scoop of tzatziki.
