Cottage Cheese Peanut Butter Mousse

This mousse came to life during a late-night kitchen wander. I was craving something indulgent, yet nourishing—and voilà! It’s rich like peanut butter pie, but secretly packed with protein. Great for dessert, snack, or even breakfast (yes, really!). Once you blend it, you won’t believe it’s cottage cheese.

Ingredients

1 cup full-fat cottage cheese

¼ cup natural peanut butter (no sugar added)

2 tbsp maple syrup or sugar-free sweetener

1 tsp vanilla extract

¼ tsp salt (optional)

12 tbsp milk or heavy cream (if needed for blending)

Optional Toppings:

2 oz dark chocolate chips

1 tsp coconut oil

Chopped peanuts

Instructions

Blend cottage cheese, peanut butter, sweetener, vanilla, and salt until silky smooth.

If needed, add milk or cream to help blend to mousse-like texture.

Melt chocolate chips with coconut oil and drizzle on top.

Sprinkle with chopped peanuts for a little crunch.

Chill for 15–30 minutes or enjoy right away.
