Cheesy Garlic Bread Lasagna Soup

2 cups lasagnette or mafalda corta pasta

2 tbsp extra virgin olive oil

1/4 onion, chopped

1/3 lb ground beef, pork & veal mix

4 garlic cloves, minced

1 tbsp tomato paste

14 oz crushed tomatoes

4 cups vegetable stock

1/4 cup heavy cream

8 garlic bread crostini

8 oz mozzarella, shredded

1 tbsp Italian parsley, chopped

Salt & pepper to taste

Instructions

Sauté aromatics: In a large pot, heat olive oil. Add chopped onion and sauté until soft. Add garlic and cook until fragrant.

Brown the meat: Add the ground meat mix and cook until browned. Season with salt and pepper.

Build the base: Stir in tomato paste, then add crushed tomatoes and vegetable stock. Simmer for 10 minutes.

Add the pasta: Stir in lasagnette and cook until al dente, about 8–10 minutes.

Creamy finish: Lower heat and swirl in heavy cream. Let it warm through.

Serve hot: Ladle soup into bowls, top with mozzarella, place a garlic bread crostini on top, and sprinkle with parsley.
