Cheesy Chicken & Rice Plate

This Cheesy Chicken & Rice dish brings together tender, spiced chicken, tomato-flavored rice, and a luxuriously creamy cheese sauce for a meal that’s pure comfort in every bite. Perfect for a hearty family dinner or leftovers you’ll actually crave!

For the Rice:

2 cups rice

2 tbsp cooking oil

1 yellow onion, diced

1 tbsp minced garlic

1 packet Sazon seasoning

1 tbsp chicken-flavored bouillon

16 oz tomato sauce

4 cups water or chicken broth

For the Chicken:

2 lbs boneless skinless chicken

2 tbsp butter

2 tbsp cooking oil

1 tbsp each: garlic powder, onion powder, chili powder

1 tbsp cumin

1 packet Sazon seasoning

1 tsp salt & pepper

For the Cheese Sauce:

12 oz can evaporated milk

16 oz Queso Blanco Velveeta

7 oz can diced chilis

8 oz grated pepper jack cheese

Instructions

Make the Rice: Sauté onion and garlic in oil. Add Sazon, bouillon, tomato sauce, and water/broth. Stir in rice, bring to a boil, cover and simmer until rice is tender (~20 min).

Cook the Chicken: Season chicken with spices. In a skillet, heat butter and oil. Cook chicken until golden and cooked through. Slice or shred.

Make the Cheese Sauce: In a pot over medium heat, combine evaporated milk, Velveeta, chilis, and pepper jack. Stir until fully melted and smooth.

Assemble: Plate rice, top with chicken, and drizzle generously with cheese sauce.
