Apple Cider Donut Mug Cake

1 Tbsp coconut oil

1 SnapDragon® apple, finely chopped

3 Tbsp almond flour

½ Tbsp chopped walnuts

1 egg (beaten)

½ Tbsp maple syrup

1 tsp cashew butter

¼ tsp baking powder

½ tsp apple pie spice (or ½ tsp cinnamon + pinch clove)

Pinch of salt

Optional: ¼ tsp coconut or turbinado sugar for topping

Instructions

In a microwave-safe mug, melt coconut oil (about 20 seconds).

Stir in chopped apple, almond flour, walnuts, egg, maple syrup, cashew butter, baking powder, spice, and salt. Mix well.

Microwave on high for 1½ to 2 minutes until set.

Top with optional sugar for extra crunch. Let cool slightly before digging in.
